A CRAVING FOR CRAYFISH
It's Mardi Gras in other parts of the world. If that makes you wistful for a
taste of Louisiana, try Minnesota Sea Grant's free crayfish recipes. "A Craving
for Crayfish" is an 11-page recipe card-sized publication that features 10
recipes and instructions on how to transport and prepare these mini-lobsters.
This is an updated version of the same publication that was printed in 1995.
According to author and Minnesota Sea Grant Associate Director, Jeff Gunderson,
crayfish tails are low in calories and high in nutrition. A quarter-pound
serving of tails contains only 82 calories, compared to 242 calories for the
same amount of ground beef. Crayfish are also a good source of calcium,
phosphorous, iron, and B vitamins.
Wild crayfish are resting in their burrows or in deep water this time of year,
but peak production time is nearing in Louisiana, so you might be able to
satisfy your craving with frozen crayfish tails offered in grocery stores. A
random survey of Minnesota grocery chains finds that Cub Foods and Byerly's
carry the critters. Most of the other chains are willing to special order them,
if requested.
