bakeries: hygiene and environmental standards

Dear PPP-colleagues, 
one of our CP-pilot companies here is a bakery. 
Does anyone out there have hygiene and environmental standards for bakeries?
Any esxamples would help discuss guidelines and furthermore to improve the
(non)existing Nicaraguan standards.
or Do you have a successful case study?
