Dishes vs. Disposables

A colleague of mine is looking for information regarding the cost/benefits
of using dishes and silverware in an industrial cafeteria versus disposable
utensils.  Is anyone aware of any studies that have been done regarding this
issue?  Are there any subtle issues that may not be thought of immediately
when considering a dishwasher system (such as water permits, pre-treatment
issues, labor, initial costs, etc.).  Thanks for your time!
