Mr. Noble --- Even though it's not fermentation, your brewery problem may
not be
that different from assessments NC DPPEA has done at soda bottlers whose
wastewater can be very high in COD/BOD.  One case study that comes to mind is

this bottler is Ron Pridgeon (919-715-6517).


P2 for most bottlers is pretty straightforward process mapping, waste
reduction
(i.e. reduce spills and changeover waste), and training.  Look closely at
cleaning practices and be sure to observe them first hand.  Hope this helps.
