RE: P2 and BMPs at restaurants



Cindy I don't have a handy thing to send you but I just want to tell a
little story.  Many years ago (I'm talking ancient history, early '90s)
I had the idea of going out to POTWs and asking them what can we help
you with.  Who's discharging what that makes a problem for you?  I
thought they would say things like solvents or metals and we were ready
to deal with that.  No, most of them said Fats, Oils and Grease and we
want you to work with restaurants!  That was a surprise.

So we developed a list of places that would take collected FOG.  Some
fed it to hogs, some shipped it to the Dominican Republic, and one had a
system for breaking it down, using aeration and grease-eating bugs.
Then we had a biodiesel place that would take it.  Then we put on
workshops about not putting grease down the drain but recovering and
recycling it instead.

I know that doesn't help with water conservation.  But those POTWs
really appreciated what we did!  Grease clogs their pipes and takes up a
lot of time to clear.  It forms a barrier on the water surface that
encourages the growth of bad anaerobic bacteria.
